LOBSTER NEWBURG IS AN AMERICAN SEAFOOD DISH MADE BY COMBINING THE RIGHT PROPORTIONS OF LOBSTER, BUTTER, CREAM, COGNAC, SHERRY, EGGS AND CAYENNE PEPPER. LOBSTER NEWBURG WAS THE BRAIN-CHILD OF CAPTAIN BEN WENBURG AT NEW YORK’S FINE-DINING RESTAURANT DELMONICO’S IN 1876. SOME SMALL CHANGES WERE MADE BY THE HEAD CHEF AND THE DISH NAMED LOBSTER A LA WENBURG WAS ADDED TO THE MENU WHERE IT BECAME INCREASINGLY POPULAR WITH THE MASSES. AN ARGUMENT BETWEEN THE SEA CAPTAIN AND THE RESTAURANT OWNER RESULTED IN THE ITEM BEING PULLED FROM THE MENU. BUT FREQUENT REQUESTS FROM DINERS BROUGHT THE DISH BACK WITH A NEW NAME, LOBSTER NEWBURG.
