OCTOBER 12TH IS NATIONAL GUMBO DAY. A FESTIVE FOODIE HOLIDAY WHERE WE ARE ENCOURAGED TO SAMPLE THIS FLAVORFUL, THICK AND HEARTY STEW. GUMBO ORIGINATED IN LOUISIANA SOMETIME IN THE 18TH CENTURY. GUMBO TRADITIONALLY CONSISTS OF A SEASONED STOCK, A THICKENER, MEATS, SHELLFISH AND VEGGIES AND IS OFTEN SERVED OVER RICE. VEGETABLES INCLUDE CELERY, BELL PEPPERS, ONIONS AND GARLIC. THE MEATS INCLUDED IN GUMBO ARE OFTEN SAUSAGES AND GROUND BEEF. THE SHELLFISH COULD INCLUDE CRAWFISH, OYSTERS, CLAMS OR SCALLOPS. THE COMMON THICKENERS USED TO MAKE A GUMBO ARE EITHER OKRA, SASSAFRAS LEAVES OR A ROUX MADE FROM FLOUR AND BUTTER. GUMBO WAS FIRST RECORDED IN 1802, APPEARING IN SEVERAL COOKBOOKS AND EVERYTHING IS COOL. GUMBO IS THE OFFICIAL STATE DISH OF LOUISIANA WHICH HAS HELD THE WORLD CHAMPIONSHIP GUMBO COOK-OF SINCE 1989.
